Piloncillo; (panela raspadura, chancaca or piloncillo, muscovado sugar, gur, jaggery, khandsari) is raw, unrefined, non-centrifugal cane sugar with a high molasses content derived from boiling and evaporating sugarcane juice. It contains what sugar producers call impurities. It turns out that these so-called impurities are essential minerals such as calcium, potassium, magnesium, copper, and iron, as well as small amounts of fluorine and selenium.

While other producers make piloncillo with white sugar and coloring, our piloncillo from Colombia is pure natural cane sugar concentrated by boiling. There are no additives. In addition to being a food source as rich as honey. Piloncillo has the reputation of being a medicinal sugar and is prescribed for use in the Ayurvedic system of medicine.

Piloncillo is widely used throughout Latin America in the canning of foods, confectionery, drinks, baking, wine making, and the making of vinegar.  The famous Colombian biking team drinks a liquid piloncillo to keep up their energy.  With minerals such as magnesium and iron, it makes the perfect sports drink. It can be used in any recipe in place of brown sugar with a 1:1 ratio.
